An Unprocessed Recipe: Peanut Butter & Jelly Bites

As promised, here’s a sneak peak inside the pages of Unprocessed.  These are super easy and super delicious and they are my new post-workout treat:

In the bowl of a food processor,  grind 2 cups of unsalted peanuts into a fine powder…

Then add 1 cup pitted dates and 1 cup dried, tart cherries…

process until a ball forms…and then add in the vanilla and process again.

Vanilla Extract

I patted the mixture into a 9″x9″ pan lined with parchment paper, but you could also form these into balls.  Keep in the refrigerator.

    Yum. I make a pnb and jelly ball that’s very similar, but I cheat and use already prepared nut butter 😉 If I don’t win a copy of this book, I might have to purchase a copy. Every recipe I’ve seen from it looks delish!

    This one sounds salty and sweet at the same time, which is a definite weakness of mine! I have a surplus of dried cherries at the moment, and I think there’s some peanuts up in the cupboard too….hmmmm. These look like they’ll be good on the plane on Sunday! And I don’t have turn on the oven! Result! 🙂

    Your photos are always so lovely–I am not a huge fan of peanuts, but this post has me wanting them now! I would love to see the recipe (or some details about) for the Portabella Mushroom Stroganoff! That sounds fantastic.
