Yeah, so things went a little haywire yesterday as many of you probably noticed from the deluge of emails from An Unrefined Vegan… I’m sorry about that; explaining how it happened would take up a lot more of your precious time, so I’ll just leave it at my sincere apology.  At any rate, there are still lots of little bugs to fix on my new site, but I’m really pleased with how it looks.  Let me know what you think!

Appetizers are not my forte.  It’s the reason I’ve thus far avoided contributing a dish to that category for the Virtual Vegan Potluck.  Waaaay too much competition!  But I was inspired by the So Delicious Dairy Free 3 Course Recipe Contest to give it a go.  These are light, fresh, and simple to make.

Coconut-Curry Sweet Potato Mousse on Zukes or Cukes
Serves 15
Light and fresh, these colorful bites make a great appetizer or snack. A creamy sweet potato "mousse" is spiced up with curry powder and then dolloped onto crisp, raw slices of fresh cucumbers or zucchini.

Mousse (makes ~1 1/2 cups)
  1. 1/2 cup plain coconut yogurt (I used So Delicious Brand)
  2. 1/8 cup coconut oil, melted
  3. 1 medium-sized sweet potato, roasted, cooled, and peeled (about 1 cup)
  4. 1 Tbsp. unsweetened coconut milk (I used So Delicious brand)
  5. juice of 1 lime
  6. zest of 1 lime
  7. 1 1/2 tsp. curry powder
  8. 1/4 tsp. smoked paprika
  9. 1 Tbsp. grated fresh ginger
  10. splash Sriracha or other hot sauce
  11. 2-3 large cucumbers or zucchinis
Garnish (makes ~1 cup)
  1. 2 radishes, roughly chopped
  2. ~T tbsp. red onion, roughly chopped
  3. 2-3 baby carrots, roughly chopped
  4. 1/2 red bell pepper, roughly chopped
  5. 1/2 cup loosely-packed cilantro
  6. 1 Tbsp. unsweetened coconut flakes
Make the mousse
  1. Put all of the ingredients in a blender and process until very smooth. Set aside until ready to assemble the appetizers.
Make the garnish
  1. Place everything but the coconut flakes in the bowl of a food processor. Pulse until the vegetables are finely and evenly chopped. Scrape mixture into a small bowl and stir in the coconut flakes.
Make the appetizers
  1. Slice the cucumbers and zucchini into 1/4-inch rounds. Place a scoop of mousse on top of each slice and sprinkle with some of the garnish. Serve.

      This theme has a “featured image” capability, but it doesn’t seem to be working right – it’s supposed to show in the post and not just on the home page. Something else to figure out ;-)!

    It took me forever to find where to comment, but I finally found it, lol! The recipe looks delicious and pretty…I love, love sweet potatos and zucchini are my favorite veggie! I like the colors of the header…it’s very eye catching 🙂

      Thanks, Brandi! I tried so many different colors up there, but I loved how the blue and dark red in the logo looked together.

      I agree about the Comments, but not sure I can change it. Looking into it, however – gotta make it easy for folks to comment, right?!

    Looking good, Annie, both the new site and the delicious sweet potato appetizers. I imagine I could scoff a whole plateful of these and never mind about the main dish. I did wonder what had happened yesterday and guessed it was teething problems. I thought your photos looked amazing on the old site but they positively pop out of the page on this one – great job! 🙂

    Wow Annie, the new site looks great. I think a few hiccups are normal starting up but everything looks good today so don’t sweat it.
    How yummy do these little appetizers look? I’d probably roast my courgettes first and then top them though as I’m not a fan of them raw.

      My first thought was to cut sweet potato into really thin slices and bake them until crisp – but I thought sweet potato on sweet potato might be too much :-). I think roasting the zucchini first would be delicious!

    Hey, I left a message before and it told me there was some error, so I’ll try again…love the colors, love the clean lines and the layout. I’ve tried to get mine to have the thumbnails for older posts but I just can’t get it the way I like. Liking this one though! Sorry you’ve had all the troubles but it’s obviously well worth it now. By the next VVP you’ll be bored with it all 😉 Great job and those cucs are really a wonderful appetizer though I think I’d eat them as a meal without a blink!
