It’s no secret that I love waffles.  Just do a quick search on the term waffles…  Around these parts, Sundays are reserved for “special” breakfasts like French toast, pancakes, or waffles – and waffles are the hands down favorite in our household.  Sunday could come seven days a week and I’d still wake up each morning craving crispy, chewy waffles generously coated in nut butter, slices of banana, and cacao nibs.

The recipe below is a revamp of Pumpkin-Pecan Whole Wheat Waffles from November 2011, which itself was a take-off on an Isa recipe.

Ingredients
  1. 2 cups gluten-free flour mix
  2. 2 1/2 tsp. baking powder
  3. 1/2 tsp. baking soda
  4. 1/2 tsp. xanthan gum
  5. 1/2 tsp. powdered stevia (or your favorite sweetener, to taste)
  6. pinch salt
  7. 2 tsp. cinnamon
  8. 1 tsp. ground ginger
  9. 1/4 tsp. ground cloves
  10. 2 cups non-dairy milk
  11. 1 cup pumpkin puree
  12. 1 cup unsweetened applesauce
  13. 1/2 tsp. maple extract
  14. 1/4 cup pecans, chopped
  15. 1/2 sweet apple, peeled, cored, and chopped
Instructions
  1. Preheat the oven to 200-degrees F and set some plates in there to warm up. Preheat your waffle iron.
  2. In a large bowl, whisk together the flour through the ground cloves. In a smaller bowl, combine the milk, pumpkin puree, applesauce, and extract.
  3. Pour the liquid mixture into the dry ingredients and whisk together to combine. Break down any dry lumps of flour. Stir in the pecans and chopped apple.
  4. Lightly spray the waffle iron with oil and place large spoonfuls of batter onto it. Gently spread the batter until it almost reaches the sides. Close and bake for about 6 minutes.
  5. Transfer cooked waffles to the warm oven while you cook with the remaining batter.
  6. Serve with fresh fruit and maple syrup - or your favorite waffle toppings.

    Oh man, stomach is grumbling now. So much grumbling.

    Waffles are an extra special breakfast for me since I have no waffle iron so rely on getting them while out. I would loooove to have these ones, they seem even more special than most!

    Pancakes and waffles are my favourite weekend breakfast! I don’t make waffles too often as it always seems a little more effort to drag out my waffle iron but these look so worth it. I didn’t realize you had so many breakfast recipes! Going to have a browse now…

    Note to self: call in to see Annie on a Sunday morning. I’m curious about the xantham gum because it’s an ingredient I often see in lists on packaging but it’s not something I’ve ever seen for sale. Where do you buy it and what does it look like? The waffles look amazing, as yours always do. I never tire of looking at those crispy golden taste sensations. Roll on Sunday!

      I will be sure to have extra waffles and a warm plate for you, Lorna! Xanthan gum is used in gluten-free baked goods for textural reasons. It’s a fine white powder. I ordered it online as I’ve not seen it for sale locally. I would bet that “better” grocers carry it.
