I’m very pleased to have a 3-DVD set of The Best of Jazzy Vegetarian to give away to one of my readers – signed, no less! Festive Kale Salad

This slightly sweet and crunchy combination makes a satisfying luncheon salad or festive first course for a holiday meal. The lemon tenderizes the kale, transforming it into a delightful alternative to your everyday green salad. Pair this appealing dish with crusty bread to enhance the delicate flavors. - Laura

Dressing
  1. 3 Tbsp. freshly squeezed lemon juice
  2. 3 Tbsp. maple syrup
Kale
  1. 6-8 cups very thinly sliced, lightly packed curly kale, washed and dried
  2. 1/2 cup dried cranberries or dried cherries
  3. 1/3 cup chopped walnuts
  4. Sea salt, to taste (optional)
  5. Freshly ground pepper, to taste (optional)
Instructions
  1. To make the dressing, put the lemon juice and maple syrup in a small bowl and briskly whisk until smooth.
  2. Put the kale, cranberries (or cherries), and walnuts in a large bowl. Pour about three-quarters of the dressing over the salad and toss gently until the kale, cranberries (or cherries), and walnuts are evenly coated. Taste and add the remaining dressing, if desired.
  3. Cover and let stand at room temperature for about 20 minutes before serving. Just before serving, top with a few grinds of sea salt and pepper, if desired.

    My husband and I watch cooking shows all the time. If the show is not Vegetarian or Vegan based, which few are, we love to talk about what we would do to make the meal Vegan. Sometimes we make it!

    I love watching Laura Theodore, the Jazzy Vegetarian, on my local PBS station! I also enjoy watching Pati Jinich’s Pati’s Mexican Table, also on my local PBS station, and my husband and I also enjoy watching Gordon Ramsey’s shows. What I love about Jazzy Vegetarian is that the food is already vegan–no extra effort to adapt or convert or substitute is required!

    I watch Jazzy Vegetarian cooking show whenever possible. I have learned so many new and different ways to prepare healthy vibrant foods. Eating to live no longer means having to suffer with eating bland uninspiring meals. I love The Jazzy Vegetarian cooking show and would be more than grateful to win a copy of the cooking show.

    I do watch cooking shows, mostly on PBS. The Jazzy Vegetarian has been an immediate favorite of mine. I look forward to watching every Sunday and then adding to the wonderful recipe collection I have accumulated.
