Peanut Butter & Jelly Day!

Peanut Butter and Jelly Day on An Unrefined Vegan

All Hail Peanut Butter & Jelly Day! I’m no piker when it comes to celebrating the best food holiday of the year. I cut my teeth on PB & Js back in elementary school and have built on that experience right up to and beyond Vegan Mofo back in 2013 where my theme was the classic salty-sweet dynamic duo. That’s 40+ years of experience! Most of these recipes below are gleaned from that crazy month of nut butter and jam madness, but a few snuck in from other times and places.

Peanut Butter & Jelly Day on An Unrefined VeganIf you’re looking for a recipe (or two or three) to celebrate this very important day, look no further. I’ve got you covered with both sweet and savory eats.

Your heart (and stomach) are in the right place. But your nutritional science needs help. Answer this question. Do you agree that the concept of Omega 3/6 ratio has health merit? If you said “Yes”, count yourself in the majority. If you said, “No.” I’d like to know your reasons.

Assuming you live in the Yes camp, then the Balance Score for peanut butter should interest you. Assuming you do not know what it is, I’ll enlighten you. The Omega 3/6 Balance Score for smooth peanut butter is -23 with is summarized as (awful effect). No one concerned about their Omega 3/6 ratio should eat standard peanut butter. But wait. Peanut butter fortified with Omega 3s has a 0 or (neutral effect). So health-conscious consumers who insist on their peanut butter and jelly sandwiches should home in on a peanut butter with Omega 3s and jelly without added sugar.

I must have felt your pb&j vibe tonight. I got sick today and the only thing I knew would get me back in good spirits was a nice peanut butter sandwich on Ezekiel toast. Wishing I had some of your tasty jams here though….my sandwich went jelly free and just wasn’t the same.
The perfect, comfy combo and you’ve got so much choice for us who could go wrong?
