When I first saw the cover of Chef Alan Roettinger’s latest, The Almond Milk Cookbook, posted on Instagram, I knew that it was one I wanted to have in my collection. Because, well, almond milk! I love both it and its byproduct, almond meal, but I don’t often make my own because for certain things I’m just darn lazy. Alan’s book makes it more than worth one’s while because of the myriad of delicious recipes rendered from the rich, nutty elixir (and meal) – and really – making it is dead simple and tastes a million times better than the stuff in cartons.

So, for the past several months I’ve been cooking on and off from Alan’s book; yummy smoothies, breakfasts, soups, main dishes, crackers, and desserts. They’re all in there and they all bear Alan’s signature style of ease of preparation, minimal ingredients and maximum flavor. When I make one of his recipes, I always feel as if I’ve created a restaurant meal in my home. 

To give you just a little taste test, I’m sharing Alan’s recipe for rich, creamy, and very decadent-tasting Chocolate Raspberry Smoothie. Simple, full of fruit and fruit, and of course…almond milk. 

FYI this slim volume is light on photos, but for me it doesn’t detract from the book. This is serious almond milk business right here. There are nearly 100 recipes inside and chapters include The Almond Dairy, Drink Up!, Morning Glory, Soups for Every Season, Grazing the Salad Bowl, Mains & Sides, and Sweet Tooth Central (where, I’m happy to report, the preponderance of recipes are to be found….)

Ingredients
  1. 1 1/2 cups plain almond milk
  2. 1 frozen medium banana, broken into chunks, optional
  3. 1 cup frozen raspberries
  4. 1/4 cup unsweetened cocoa powder
  5. 7 pitted Medjool dates
  6. 1 Tbsp. coconut oil*
  7. 1/2 vanilla bean, chopped, or 1 tsp. vanilla extract
Instructions
  1. Put all the ingredients in a blender and process on high speed until smooth. Serve at once.
Notes
  1. *I made this without the coconut oil and used about a 1/2 teaspoon of sunflower lecithin as a binder.

    Quite honestly, almond milk really is my favorite nondairy milk at the moment! I’ve been meaning to try cashew milk, but I keep coming back to almond! :)

      Easy! Just whirl a few strawberries (in the winter you can use frozen!) and maybe a date or two in the blender with your unsweetened almond milk. Best strawberry milk ever. You can strain it through a fine sieve if you like it super smooth, but I think the seeds give you the full strawberry effect.

    Wow! What a great cookbook this looks like, I love almond milk! Almond milk is definitely my plant-based milk of choice (unsweetened) with cashew being a close second of the late. I love that you can use them anywhere and it’s now hard for me to understand how anyone can prefer the taste of cow’s milk over these delicious options. Thanks for the giveaway, I just love your recipes:)

    Almond is my go to! I try others, coconut, soy, rice, but I always come back to almond. Mostly because I always have almonds and I hate going to the store. That and I like it!!!

    Almond milk, unsweetened for sure! (Trader Joe’s or Whole Foods for the most part, as the others are too watery–indeed very watered down as recent news has pointed out!) I also love soy milk but soy affects my hormones and general health in startling ways, as I noticed when I became a vegan and started drinking it in large quantities. So almond milk it is! Wish I had the drive to make it myself!

    Dark Chocolate Almond Milk is my favorite non-dairy milk at the moment. I have phases where I just want the sweetened vanilla, and I always use unsweetened for cereals and things like that where it would be too sweet otherwise, but I can’t get used to the unsweetened stuff for drinking.

    Almond and cashew milk are my go-to’s, depending on what I’m making. Just put a banana in the freezer to make the chocolate raspberry smoothie later! Sounds delish!

    This almond milk book sounds ideal for me & this lovely easy smoothy rocks! i found it to be a bit sweet for me so the next time, I used less dates, only 2! I used frozen yellow raspberries from my own garden! Very yummy too!
