Vegan Loaded Split Pea SoupI’m like the Princess in the Princess and the Pea.  It doesn’t matter how many layers of goodness you have covering up that tiny pea.  I will find it.  I don’t want peas baked into pot pie, hanging about in my vegetable coconut korma, mixed into stir-fries or tossed into minestrone.  There are two ways I like to eat peas: straight out of the pod or cooked up into split pea soup.  Like this one.

Ingredients
  1. 4 cups vegetable broth + more for sautΓ©ing
  2. 4 cups water
  3. 1 Tbsp. Bragg Liquid Aminos
  4. 1 large onion, chopped
  5. 2 cloves garlic, minced
  6. 2 carrots, peeled and diced
  7. 2 stalks celery, diced
  8. 1 parsnip, peeled and diced
  9. 1 cup butternut squash, diced
  10. 1 Tbsp. curry powder
  11. 1 tsp. cumin powder
  12. 1 cup green split peas
  13. salt & pepper, to taste
  14. 1 cup fresh or frozen corn
  15. 2 links seitan sausage (I used a couple of links of apple-sage)
Instructions
  1. Saute the onion, garlic, carrots, celery and parsnip for 8-10 minutes in a splash of vegetable broth and stir occasionally, adding more liquid if needed. Stir in the butternut squash, curry and cumin powder and saute for about 1 minute. Add the 4 cups broth, water, Liquid Aminos and the split peas. Bring to a boil and then reduce heat to a gentle simmer. Cook until the peas and vegetables are very tender.
  2. Meanwhile, slice the seitan sausage into 1/4" rounds and brown on low heat using water or vegetable broth sparingly to keep the sausage from sticking to the pan. Remove and set aside.
  3. Stir in the corn and the sausage and cook for a few minutes - just to heat them through.

    I haven’t had split pea soup since I was little tyke… and probably didn’t like it much back then, but this version looks WONDERFUL! I love all the corn, and the sausage… Yummm!

    Ohh apple sage sausage..YUM! My favorite vegan sausage is made by Field Roast, and they have an apple sage flavor that is to die for! This soup looks deeelicious!

    Ah the pea debate! I love them in everything but my husband will never have it – he’s a raw pea guy if anything and as much as I would love to he’d have non of pea soup!! I would though…and this looks likes winter winner! So hearty! πŸ™‚

    The Husband hates peas, so is probably secretly happy that I can’t have peas anymore. I do love them though, and especially in a hearty soup like this! The weather has cooled here finally, so I can now start thinking of yummy soups and stews. Thanks for the inspiration!

    I just bought a tonne of pulses from my wonderful local health food shop to go experimental this fortnight. I have been totally inspired by Vegan mofo and some of the recipes that I have found are inspirational. I have been thinking about using more of the smaller (more easily cooked) lentils and split peas etc and even found a tofu made of split peas! There is really nothing more soul satisfying than a bowl of hot soup with fresh crusty bread on a cold day/night and this soup promises heartiness to the max. I love the mix of gentle spicing and the addition of the seitan sausage. We can’t get seitan sausage here (can’t really get much of anything vegan πŸ˜‰ ) but that makes me a better cook because I have to go wide and make them myself. I love smoked paprika and have noticed that if you want a soup reminiscent of pea and pork product (hey, sometimes you do!) then smoked paprika gives you that hint of smoke. We used to use liquid smoke but aside from not being able to buy it any more it isn’t all that healthy for you so the smoked paprika gives the kick without the worries. I love the way that you and Somer’s mofo postings are going. I could live for a year on the delicious recipes that you two are pumping out for us all. You are going to have to take November off to recover! πŸ™‚

    I am the same way!! Too funny. I can’t stand most peas, but I love split pea soup and fresh pea pods. Sounds like we are 2 peas in a pod (sorry! I couldn’t resist) πŸ˜‰
